Heart disease is the leading cause of death in men and women in the United States and includes conditions such as high blood pressure, stroke, and congestive heart failure, among others. The good news is these illnesses can be managed, or even prevented, with diet intervention.
February is Heart Health Month and a great time to incorporate foods to your diet that promote a healthy cardiovascular system. Beets are an excellent example!
Beets are high in nitrates, which cause blood vessels to dilate, and lowers blood pressure.
They are also a good source of betalains, an antioxidant found in the pigment that can reduce inflammation sometimes associated with heart disease.
The high fiber content in beets is a great way to reduce cholesterol.
Additionally, beets are high in folate, which reduces risk of heart disease, and copper, which helps in red blood cell production.
If you are uncertain how to incorporate beets into your diet, try these tips:
- Drink a glass of beetroot juice
- Shred beets to make a colorful addition to salad or coleslaw
- Blend beets and Greek yogurt for a healthy dip
- Don’t toss the leaves – the leaves can be cooked (similar to the way you would cook spinach)
